When I first saw this baby on Pinterest my eyeballs nearly fell out of my head. A no-flip pancake that does its work for you in the oven and looks like a pizza pie? Say no more, cute chicks from Two Tarts; I am totally on board.
And so it was with great excitement and triumph that I produced this pancake for brunch both on Saturday AND Sunday -- since its deliciousness and minimum ingredient content make it way too easy to make twice in one weekend. And now, it is time for me to pass this little bit of heaven on to you.
Although this magnificent pancake is best made in a skillet, I have learned that it can also be prepared in a pie pan.
And now, the recipe:
You will need:
- 3 tbs unsalted butter
- 3/4 cup all-purpose flour
- 1/2 tsp salt
- 3 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 cup blueberries, raspberries, or blackberries (or combination), fresh or frozen
- powdered sugar, for sprinkling
- A Skillet or Pie Pan (but preferably a skillet)
2. Combine your eggs, milk, and extract in a separate bowl and whisk until incorporated. Then take your wet ingredients mixture and add that to your dry ingredients. Whisk until completely smooth.
3. When the oven is fully pre-heated, place your butter in your skillet or pie pan and put the pan (with the butter in it) into the oven. Wait about two minutes for it to be melted and bubbly.
4. When the butter is melted and bubbling up in the pan, take it out of the oven and immediately pour your pancake mixture into the pan. Sprinkle the top evenly with a cup of your berries of choice -- I used half a cup of frozen strawberries and half a cup of fresh blueberries -- and then put that baby right back in the oven.
5. Bake at the same temperature for 12-15 minutes (for me it was 15) until the edge of the pancake is puffy and golden. The inside will look custard-like and that is perfectly okay.
6. Remove the scrumptious pancake pan from the oven, and from here you can either transfer it to a serving platter, or serve it up right in the skillet like I did and top with powdered sugar.
